It is similar to the Anaheim chile which was brought to Anaheim, California in the early 1990’s, originally from New Mexico. The Anaheim chiles are mild in heat and range from 500 to 2500 Scoville heat units. The chile peppers grown in New Mexico are generally hotter. They are light green and slender, averaging about 6 to 7 inches in length. The New Mexican chile has a bright scarlet color and an earthly mild chile flavor. It is used to make classic red chile sauces and in Southwestern cuisines.
